Spinach, Mozzarella & Bolognese Parcels

"101 ways with mince" never got this delicious. This recipe takes everyday favourites and combines them to make a stellar savoury dish - a real bonus for the home cook.

Ingredients

Sauce

  • 2 tbsp extra virgin olive oil
  • 1 large onion, peeled and chopped
  • 4 cloves garlic, peeled and crushed
  • 1 kg lean minced beef
  • 1 tbsp mixed dried herbs
  • 2 tsp chopped oregano
  • 1 tbsp Worcestershire sauce
  • 4 kg Portobello mushrooms
  • 410 g can whole kernel corn, drained
  • 410 g can savoury tomatoes
  • 300 g tomato paste
  • ½ cup red wine
  • salt and pepper, to season

Parcels

  • 125 g ready-rolled flaky puff pastry
  • 250 g mozzarella cheese, grated
  • 100 g baby spinach leaves
  • 1 egg, beaten

Method

  1. Preheat oven to 200 °C and turn dial to convection
  2. Heat oil in a large pan. Add chopped onions and garlic. Once softened and caramelised, add mince. Brown mince, and then add remaining sauce ingredients. Cook for 15–20 minutes.
  3. Place a pastry sheet on a greased baking tray. Spoon bolognese sauce on top, sprinkle with grated mozzarella cheese and top with spinach leaves. Fold pastry to form a parcel. Egg wash the parcel.
  4. Bake at 200 °C for 25–30 minutes. Serve immediately.
