Recipe of the Month: Classic Minestrone

Ingredients:

• 1 tablespoon olive oil
• 200g pancetta or bacon (optional)
• 1 onion, diced
• 3 celery sticks finely chopped
• 2 carrots diced
• 2 cloves garlic, minced
• 2 potato, peeled and diced
• 2 vine-ripend tomatoes, chopped
• 5 cups of chicken stock
  (can be substitued for vegetable)
• 1 x 400g can cannellini beans
• 150g green beans, trimmed and cut
• 2 bay leaves
• 2 tablespoons parsley, chopped
• 100g minestrone pasta

Method:

1. Heat oil in large saucepan or stockpot. Add pancetta and onions, saute until onions are transluscent.
2. Add the carrots, potatoes, garlic and sauté for a further 2 minutes.
3. Pour in the stock , add, tomatoes, bay leaves, bring to the boil then simmer with the lid on for 40 minutes.
4. Add the green beans and cannellini, continue simmering for 10 minutes.
5. Add the pasta and cook until al dente, 8-10 minutes.
6. Add parsley and stir in salt and pepper to taste.
7. Serve with crusty bread.
