Product Feature: Metropolis 1385 Café Retro

Recipe of the Month: Amaretto Crepes with Apricot Sauce

Complete your favourite meal with this sweet treat and a fresh brewed espresso!

Ingredients:

Crepes:

  • 75g plain flour
  • 1 tbs sugar
  • ˝ tsp salt
  • 2 eggs, lightly beaten
  • 150 ml milk
  • 2 tbs butter or margarine

Filling and Topping:

  • 2 tbs caster sugar
  • 2 tbs amaretto
  • 300ml thickened cream
  • Amaretti biscuits

Sauce:

  • 250 ml apricot jam
  • 4 tbs amaretto
  • 4 tbs water

Recipe of the Month: Amaretto Crepes with Apricot Sauce

Method:

  1. Prepare apricot sauce by heating jam, amaretto and water in a small saucepan until well combined.
  2. Make crepes by sifting together flour, sugar & salt.
  3. Combine beaten eggs, milk and butter or margarine and gradually add to dry ingredients until well blended. The mixture should be smooth and easy to pour.
  4. Heat a large heavy frying pan and grease lightly. Add two tablespoons of batter to the pan and swirl to thinly cover the surface, turning after a minute or when golden brown. Stack on a warming plate while repeating process to make 12 crepes.
  5. Make filling by whipping cream with caster sugar, then folding through amaretto. Then just prior to serving, fold through coarsely crushed Amaretti biscuits.
  6. Spread a couple of spoonfuls of the amaretto cream mixture on one half of each crepe, then fold in half and then spread a further spoonful on one side of the folded crepe before folding over again. Ie: Each crepe should be folded in quarters with the amaretto cream mixture sandwiched in between the layers.
  7. Place filled crepes on individual plates, spoon over sauce and dust with icing sugar (optional).
